Ginger cookies

375 degrees
5-6 minutes
makes five dozen
1 cup of Crisco shortening
1 cup of granulated sugar
1 large egg
1 cup of molasses
2 table spoons of vinegar
1 1/2 teaspoon of soda
1/2 teaspoon of salt
*for extra spicy cookies( heap spoons )
2-3 teaspoons of ground ginger
1 teaspoon ground cinnamon
1 teaspoon of ground cloves
5 cups of sifted all purpose flour

Cream together: shortening and sugar,
beat in egg,molasses and vinegar.
Sift together dry ingredients and spices *chill 3 hours*

Roll dough 3/8" thick on lightly floured surface.Cut in shapes.
Place on a greased cookie sheet( spray lightly with Pam if you want)
Bake 5-6 minutes at 375 degrees
cool slightly and remove to serving plate.For larger cookies (say 3") add a few minutes to cook time. makes five dozen

A time to remember ,and if I remember...

Yes it is fall again,and look how bad I've been..no post since I can't remember??

But this is one thing I'll try to do better on,a new years resolution EARLY!

One thing I have learned from my new friends at Stamp Magick is...what a blog should look like.As you can see my poor attempts from befor.
This is a pcture I saw when I looked out my kitchen window,just at sun set.As you can see we still have the full trees and the fall colors are not showing yet.
The yellow glow is the sun setting on the lake through the trees,a walking distance from here.

Kissin' wears out...cooking don't,Buckeye candy

Buckeye Candy:
1 pound jar peanut butter (I use Jiffy cause it really makes a difference)
1/2 pound margarine ( stick butter softened,my choice Parkay)
1 1/2 pounds powdered sugar
Mix all this and form into 1" to 1 1/2"balls

Melt: in a double broiler(or I just use a pan setting in a pan of water)
Heat your water up to a small boil to melt the chocolate thats in the top pan.
You will need a package of chocolate chips and,
1/4 stick of paro wax(the kind you use for canning jelly)
Melt them both together( the little bit of wax just keeps the chocolate from melting in your hands and gettin gooie)
Now take your peanut butter and powdered sugar mix that you have rolled into balls,stick a toothpick in it and dip into melted chocolate.
Leave a 1/2" uncovered to look like a buckeye,sit on wax covered plate.
Continue till all are dipped and place in refrigerator.Later cover up the hole left by the toothpick by pressing a clean finger over the hole.
These taste like reeses pieces,and you can make them look like eggs for Easter.

Burbon (or Rum) Balls

2 1/2 cups crushed vanilla waffers
1 cup & 2 tbl.spoons powdered sugar
1/2 cup shredded coconut-or more
3 tbl.light corn syrup
1/4 cup Burbon Supreme-1/2 cup

Mix well,and roll into 1" balls
roll into powered sugar

This makes a good plate full,I always double it..cause EVERYBODY love em.

Spicy Pumpkin Drop Cookies

5 tsp. cinnamom 2 cups canned pumpkin
1 tsp. nutmeg 4 cups sifted flour
1 tsp. ginger 8 tsp. baking powder
1 cup of shortening 2 cups raisins (plumped)
2 cups sugar in boiling water (drained)
4 eggs well beaten 1 cup of chopped nuts
2 cups canned pumpkin
4 cups sifted flour
8 tsp. baking powder
2 cups raisins (plumped)in boiling water (drained)
1 cup chopped nuts

cream together:
spices,shortenig,and sugar...add well beaten eggs
stir in canned pumpkin...add combined flower and baking
powder (mix well)
add raisins, and nuts...mix well
drop by tsp. on ungreased cookie sheet
bake at 375'..15 min makes 8 doz.
